Foraging Meadowsweet

Meadowsweet is like elderflower but with a hint of almond smell. (It was used as something of a medieval air freshener.) It grows here in Connemara in abundance. 

I brewed up a cordial, by using only the flowers, sugar and vitamin C (for preservation and zestiness). I brewed it all in hot water for half an hour, let it sit for a night, then strained into jars that have been treated by hot water (to kill bacteria). You can also dip these flowers in batter and fry them up as a delicacy.

The Irish name for meadowsweet is ‘airgead luachra’ which means ‘rush silver’.
